Cake of Cheesus
I've finally created the ultimate recipe for a baked cheesecake! Using mascarpone makes this cheesecake the most moorish delicious sweet but not so sweet dessert you'll ever eat. This fool-proof recipe is a great triumph for me. It will definitely be something i turn to for the rest of my life for a can't go wrong baked cheesecake. For the Crust:
200g Sweet Biscuits
150g Butter, melted
Filling:
500g Cream Cheese
350g Mascarpone Cheese
1 cup (220g) Castor Sugar
4 eggs
1 teaspoon Vanilla essence
1 teaspoon Lemon Zest
2 Tablespoons Lemon Juice
1 1/2 Tablespoons Cornflour
Passion fruit syrup
150ml strained passionfruit juice, Approx 15 passionfruit (*See tip)
1/4 cup Castor sugar
Preheat oven to 150C. Grease and line a 22cm spring-form pan. Place the Biscuits in a food processor and blend to a fine crumb. Add melted butter and pulse to bring together. Press into a cake tin, pushing down with the back of a spoon and refrigerate in the fridge for 30 minutes.
To make the filling place the cream cheese, mascarpone, sugar, vanilla and lemon zest in a food processor and blend until smooth. Add eggs one at a time while the motor is still running to incorporate into the mix slowly. Place the lemon juice and corn flour in a small bowl and mix to combine. Add to the cream cheese mix and blend once more to combine. Pour filling over the chilled base place on a tray and bake in the oven for 1 hour, it should still have a little wobble at this point. Turn the oven off and leave for 1-2 hours. Remove from the oven and refrigerate the cheesecake to serve cold.
Meanwhile, to make the syrup, place the juice and sugar in a small saucepan and stir over medium heat until the sugar has dissolved. Increase the heat to high and cook for 4-5 minutes, or until its reduced and thickened. Chill and Pour over the cheesecake to serve, top with fresh mint leaves if you like.
*Tip: If passionfruit are too expensive you can change this for any kind of flavour you like. Even going half with orange juice to make it more budget friendly, or swapping it entirely for frozen berries or even Dulce Leche for ooooooober richness.
